These muffins are a favorite at our house. Everyone likes them because they are delicious, but I adore them because they are easy to make and freeze wonderfully. Pop a muffin out of the freezer in the morning, microwave for about 30 seconds and go!

This look yummy! I wonder if you have ever considered ramping up the nutrition by using sprouted flour or masa instead of cornmeal? If you used buttermilk, you could soak the flour overnight, too. I think I’ll try that. I think the kids would like this for breakfast this week. I stopped by from Monday Mania.

I haven’t tried these yet with sprouted flour, masa, or soaking but I think it should work. I think I’ll try either sprouted flour or soaking on my next batch (and I’m off to research masa). If you try it out stop back by and let me know how it goes! 🙂
